New all-wagyu degustation unveiled at La Madonna

Melbourne's French-Italian La Madonna restaurant is tipping its hat to one of Australia's most celebrated beef producers in a decadent five-course degustation dedicated to Wagyu.

Available for a limited time, An Ode to Westholme Wagyu is a balance of restraint and richness, with Michelin-trained executive chef Jacopo Degli Esposti building each course around a unique expression of Westholme Wagyu, from delicate and technical through to deeply savoury.

Diners can expect delicate wagyu tongue served with jus à manger; MB5 hanger steak carpaccio with bone marrow; and silky tenderloin tortellini in a wagyu consommé, before the main event: a classic French-style entrecôte, a 45-day butter dry-aged MB6 cube roll pan-fried in butter, finished with wagyu jus. 

Jacopo has also collaborated with sous chef and pastry extraordinaire, Adrianna Kolda to cleverly carry wagyu through to dessert as well, with an indulgent wagyu tallow crème brûlée to finish the experience.

Nestled on level three of Next Hotel Melbourne, La Madonna sets an equally elevated scene for the occasion, pairing considered plates with the restaurant's signature blend of fine-dining polish and an unmistakably European sense of hospitality.

An Ode to Westholme Wagyu will be available Tuesday-Saturday until 31 October, 2026, $220 per person, with optional wine pairing $110 per person. Reservations are essential.
